25 Days of Christmas: Day 14

When I first came across this cookie recipe online, I knew I had to try it--the cookies just look so fun and festive!

The recipe uses a box of cake mix, so while they do still have the shape and some texture of a cookie, they really do taste like cake batter cookies! mmm!!

At first, I wasn't sure what to expect, because they have a kind of short baking time {9 minutes}, so I wasn't sure that they were done, but I was surprised that they were and that they turned out as good as they did :)



Ingredients:
  • 1 box of vanilla/white cake mix {I used white cake mix}
  • 1 teaspoon of baking powder
  • 2 large eggs
  • 1/3 cup of vegetable/canola oil
  • 1/2 teaspoon of vanilla extract
  • 1 cup of sprinkles {I actually didn't measure...I just added until I thought I had enough!}
Direction:

1. In a large bowl, mix together the cake mix and baking powder.  Set it aside.


2. In a smaller bowl, mix together the eggs, oil and vanilla. 


3. Add the egg mixture to the cake mixture and stir to form a dough.


4. Gently mix in the sprinkles--you don't want to dye the cookie dough by over stirring the sprinkles.  You can use whichever kind of sprinkles you want....I decided to use three different kinds, just to make it more fun.


5. Drop rounded 1-inch balls of dough onto a waxed paper lined baking sheet.


6. Bake for 9 minutes--do not let the cookies get brown.  Allow to cool on baking sheet for 3 minutes, as they will be very soft at first.  As they cool, the tops will settle down and you can transfer them to a wire rack to cool completely.
